[Buffy is starting to remind me of 80's TV, or is it 70s? (à la Who Shot JR?) Every episode is a cliffhanger! Of course, I'm not complaining though.]

Brief diversion: Here are two recipes using lime, one of my favourite ingredients.

Lime Jelly Cakes

One and a half cupfuls of flour
Half a cupful of butter
Two and a half cupfuls of flour
Two tablespoonfuls of baking powder
Three eggs

Beat the butter and sugar together, then add the flour and baking powder by degrees, putting in the milk
now and then. Add the eggs last very well beaten and stirred in gently. Fill in layers with lime jelly.


Lime Jelly for filling the Cake

One cupful of icing sugar
One egg
The grated yellow rind and the juice of one lime
One teaspoonful of water
One teaspoonful of flour

Put the sugar, the egg and all the other ingredients into a basin and stir well together till thorougly mixed,
do not beat the egg. Then, put the mixture into a little pan, and put the pan into one a little larger with boiling
water in it, over the stove. Stir till it gets thick, and when done let it cool and spread between the cakes.

Margaritas

lime margarita 1-1/2 oz white tequila
1 oz. Cointreau
1/2 oz. lime juice freshly squeezed (1 lime)
1/2 cup shaved (or crushed) ice

1) Salt rim of glass
Place thick layer of salt in small dish or bowl.
Take empty glass and moisten its rim with a lime wedge.
2) Place all ingredients in a shaker and shake.
3) Strain or serve with ice.
